A deep, meaty lentil-and-tomato ragù, part of it blended smooth so it clings to the pasta like the real thing. Long-simmered depth out of a bag of dried lentils.
Ingredients
Everything here is already in your pantry.
- Green Lentils 1 cup 192 g
- Whole Wheat Pasta 4 cups 384 g
- Diced Tomatoes 2 cans (14.5 oz) 822 g
- Tomato Paste 2 tbsp 32 g
- Red Onion 1 110 g
- Carrots 2 122 g
- Garlic 4 tsp 20 g
- Dried Basil 1 tsp 1 g
- Dried Oregano 1 tsp 1 g
- Balsamic Vinegar 1 tbsp 16 g
- Better Than Bouillon 1 tbsp 17 g
- Extra-Virgin Olive Oil 2 tbsp 27 g
- Sea Salt to taste to taste

No close substitute for Balsamic Vinegar.
Method
- Heat the 2 tbsp27 g olive oil in a pot over medium. Cook the 1110 g finely diced onion and 2122 g finely diced carrots until soft, 7 minutes. Add the 4 tsp20 g garlic, 1 tsp1 g dried basil, and 1 tsp1 g dried oregano for 30 seconds, then stir in the 2 tbsp32 g tomato paste and cook 2–3 minutes, until it darkens and starts sticking to the pot.
- Add the 1 cup192 g green lentils, rinsed, 2 cans (14.5 oz)822 g diced tomatoes, and the 1 tbsp17 g bouillon dissolved in 3 cups water. Simmer 25–30 minutes, crushing the tomatoes against the side of the pot as they soften, until the lentils are tender and the sauce is thick.
- Near the end of the simmer, boil the 4 cups384 g pasta in salted water until just tender, then drain.
- Blend about a third of the sauce — an immersion blender right in the pot, or a scoop run through the blender and stirred back in. It purees some of the lentils into a glossy, meaty body, no cream needed.
- Stir in the 1 tbsp16 g balsamic vinegar and season with salt, to taste. Serve over the pasta.
Kids: blend more of the pot — or all of it — for a smooth red sauce that hides the lentils completely.

FoundDried shiitake left the pantry — the worst cost-per-use of anything on the list, for a background note this sauce already gets from cooked-down tomato paste and bouillon.
ChangedDropped the shiitake and switched to diced tomatoes, crushed against the pot during the simmer so the sauce still comes together smooth.
