How to cook it

Carrots work at both ends of a meal. Diced small and softened with onion, they’re part of the aromatic base that flavors a soup, a stew, a pot of lentils, or a sauce; the sweetness they release balances the acid in a tomato dish. On their own, roasted hot until the edges caramelize, they’re a side that needs nothing but salt. Raw, in sticks or grated into a slaw, they bring crunch and color.
