How to cook it

  1. Rinse the lentils under cold water.
  2. Simmer in about three parts water to one part lentils, lid ajar, for around 25 minutes.
  3. Salt only at the end, once they're tender with a little bite.
  4. Drain any excess water, or keep it if you're heading for soup.

In the kitchen

Green lentils hold together where red lentils dissolve, so they stand in for ground meat in a bolognese or a shepherd’s pie, carry a grain salad without going gluey, and take a hard sear in a hot pan. Push them five minutes past done and they soften into soup, which is sometimes exactly what you wanted.

They like earthy, assertive company: cumin, smoked paprika, a bay leaf, and plenty of garlic. Finish with enough acid to lift the whole pot, a splash of vinegar or lemon. Cook a double batch. They keep for days and turn cold leftovers into lunch with no second effort.
