A cheesy-tasting sauce blended from cashews and soft vegetables, built on slow-softened onion for savory depth. Rich and creamy with no dairy in sight.

- Whole Wheat Pasta 4 cups 384 g
- Extra-Virgin Olive Oil 1 tbsp 14 g
- Red Onion 1 cup 160 g
- Cashews 1 cup 137 g
- Soy Milk 1 cup 243 g
- Russet Potatoes 1½ cups 225 g
- Carrots 1 cup 110 g
- Nutritional Yeast 4 tbsp 20 g
- Garlic 2 tsp 10 g
- Onion Powder 1 tsp 2.3 g
- Garlic Powder 1 tsp 2.8 g
- Apple Cider Vinegar 3 tsp 15 g
- Turmeric ¼ tsp 0.7 g
- Red Pepper Flakes ¼ tsp 0.5 g
- Sea Salt to taste to taste

No close substitute for Onion Powder, Garlic Powder, and Turmeric.
Method
- Boil the 4 cups384 g pasta until just tender; reserve a cup of the water, then drain.
- Meanwhile, warm the 1 tbsp14 g olive oil in a saucepan over medium heat and soften the 1 cup160 g onion, diced, until translucent, about 5 minutes. Stir in the 2 tsp10 g garlic, 1 tsp2.3 g onion powder, 1 tsp2.8 g garlic powder, ¼ tsp0.7 g turmeric, and ¼ tsp0.5 g red pepper flakes and cook a full minute, until fragrant — that bloom is what makes the sauce taste cooked, not just smooth. Add the 1½ cups225 g potatoes, diced, 1 cup110 g carrots, diced, and 1 cup137 g cashews with water to cover and simmer until everything is very soft, about 12 minutes.
- Tip the mixture into a blender with the 4 tbsp20 g nutritional yeast, 3 tsp15 g apple cider vinegar, salt, to taste, and the 1 cup243 g soy milk. Blend until silky, but stop as soon as it is — russets turn gluey if you keep going. Add a splash more water if it’s too thick to move.
- Toss the sauce with the pasta, loosening with the reserved pasta water until it coats every piece.
Kids: blend the sauce extra smooth, skip the pinch of red pepper flakes, and stir in a little extra nutritional yeast — that’s the cheesy hit they’re after.

FoundThe sauce was blended with a cup of plain water, so every bit of its body had to come from the cashews and the starchy potato.
ChangedThat cup of water becomes soy milk. The cashews stay — they are the emulsion here, not a milk substitute — so the sauce gains dairy-like body and protein on top of them rather than instead of them.

FoundDijon left the pantry: one recipe, and its tang overlaps the cider vinegar already in the sauce.
ChangedDropped the dijon and took the cider vinegar to 3 tsp. The potato is now specified russet, so the blending step warns against overdoing it.

FoundEvery top vegan mac builds a sauteed-onion base with a bloomed spice layer and tangs the sauce with vinegar, not lemon; ours plain-boiled the vegetables and used lemon.
ChangedAdded a softened-onion base with the garlic and powders bloomed in oil, and swapped the lemon for apple cider vinegar off the heat for a sharper, more cheese-like tang.
