How to cook it

  1. Scrub well; russets don't need peeling unless you want a smooth mash.
  2. To roast: cut into chunks, toss with oil and salt, and roast hot until crisp outside and fluffy within, about 35 to 45 minutes.
  3. To mash: boil in salted water until a knife slides through, drain well, then mash with a little liquid and fat.
