Berry Overnight Oats

Cold and creamy, gone purple from berries that bleed overnight and sweetened by dates that soften as they soak. Stir it together at night; it's spoonable by morning.

What you'll need

Method

  1. In a jar or bowl, stir together the 1 cup80 g rolled oats, 2 tbsp14 g ground flaxseed, ½ tsp1.2 g cinnamon, ½ tsp2.1 g vanilla, and the 1 cup243 g soy milk. Add the 2 tbsp32 g peanut butter and stir it in loosely — a few streaks left to find the next morning are a good thing.
  2. Fold in the ½ cup74 g frozen blueberries and the 248 g chopped dates, then press everything down so the oats sit under the liquid.
  3. Cover and refrigerate overnight. The berries thaw and bleed purple, the dates soften into sweetness, and the oats drink up the milk into something creamy and spoonable.
  4. Eat cold, or warm for a minute. Keeps 3 days.

Kids: mash the dates in first so the sweetness spreads evenly — no one picks around it.

    FoundEvery top-rated version soaks its oats in a milk; ours soaked them in water, and leaned on peanut butter to supply the richness that was missing as a result.

    ChangedThe cup of water becomes a cup of soy milk. The peanut butter stays — it earns its place on flavour now rather than as compensation — so the bowl is creamier and carries a good deal more protein for the same five minutes at night.

    FoundThe top overnight oats all get their creaminess and staying power from a spoon of nut butter or yogurt; ours was oats-and-water and leaned only on convenience.

    ChangedStirred in peanut butter for richness and protein plus a little vanilla, and now press the oats under the liquid so the top sets soft, keeping chia out on purpose so it stays porridge, not pudding.
