Ground Flaxseed

The standard egg replacer for plant baking, and a spoonful of plant omega-3 and fiber you can stir into almost anything unnoticed. One bag does a job nothing else in the pantry quite covers.

How to cook it

  1. For a flax egg: stir 1 tablespoon ground flaxseed into 3 tablespoons water and let it sit 5 to 10 minutes until it gels.
  2. Use that gel in place of one egg in pancakes, muffins, quick breads, and binders.
  3. To stir into oats, smoothies, or a batter, add it straight; no soaking needed.
  4. Buy it ground, or grind whole seeds yourself; whole flax passes through undigested.

In the kitchen

Ground flaxseed is a quiet multitasker. Its headline job is the flax egg: a tablespoon stirred into water gels in minutes and binds a batter in place of an egg, which is how a plant kitchen makes pancakes, muffins, and quick breads hold together. Past that, it’s a nutrition booster you can hide anywhere, a spoonful into oatmeal, a smoothie, or a batter, adding body and a faint nuttiness without changing the dish.

The one rule is to buy it ground, or grind it yourself, and keep it cold. Whole flax slips through undigested, and ground flax left warm turns bitter, so the fridge or freezer is where the bag lives.

Health

Flaxseed is a top plant source of ALA omega-3, the fat most diets run short on, and it’s exceptionally high in fiber, much of it the soluble kind that gels, which is what makes a flax egg work in the first place. It also carries lignans, plant compounds studied for their own sake.

Common questions

How do I make a flax egg?

Stir one tablespoon of ground flaxseed into three tablespoons of water and wait five to ten minutes. It thickens into a gel that binds like an egg. It works best in recipes wanting one or two eggs for structure, like pancakes, muffins, and quick breads, less so where eggs do the lifting, like a sponge cake.

Does flaxseed have to be ground?

Yes, to get anything from it. Whole flaxseeds have a hard hull and pass through undigested, taking their omega-3 and fiber with them. Ground flax releases both. Buy it pre-ground, or grind whole seeds in a spice grinder as you need them.

Why does my ground flaxseed taste bitter or fishy?

It's oxidizing. Ground flax has exposed oils that turn faster than whole seed, so a bag left warm goes bitter within weeks. Keep it in the fridge or freezer sealed, and it stays fresh for months.
