Medjool Dates · Dried

A whole-food sweetener that comes with its own fiber: blended into a paste they sweeten a dressing or a batter, and pitted they bind an energy bite or turn into caramel. Sweetness that eats like fruit, because it is.

How to cook it

  1. Check for and remove the pit; most are sold pitted, but not all.
  2. For a paste or caramel: soak in hot water 10 minutes if stiff, then blend with a splash of the soaking water until smooth.
  3. For energy bites: pulse pitted dates with oats and nut butter until the mix holds together, then roll.
  4. Stuff whole pitted dates with nut butter for a two-second dessert.

In the kitchen

Dates are sugar that behaves like fruit. Blended into a smooth paste, they sweeten a dressing, a smoothie, a bowl of oats, or a batter while bringing fiber along for the ride; pulsed with oats and nut butter, they bind an energy bite with no added sugar at all. Whole and soft, a pitted Medjool stuffed with a little peanut butter is dessert in one bite, and blended with a splash of water and a pinch of salt they make a genuine caramel.

Keep them soft and check for pits. If a bag has dried firm, ten minutes in hot water brings them back to blendable.

Health

A date is whole dried fruit, so its sweetness arrives wrapped in fiber, which slows how the sugar hits and is what sets it apart from refined sugar or syrup. They’re dense in potassium too. They’re still high in sugar and easy to eat by the handful, so they’re a sweetener with benefits rather than a free pass, best used where their fiber and body do real work.

Dates count as fruit under every framework here: EAT-Lancet, the Mediterranean pattern, DASH, and the Daily Dozen all count fruit, with dried fruit as a concentrated form of it. The datasets are linked from the frameworks and research below.

Common questions

How do I use dates to sweeten things instead of sugar?

Blend them into a paste. Soak pitted dates in hot water until soft, then blend with a little of that water until smooth. That paste sweetens dressings, oatmeal, smoothies, and batters, bringing fiber along with the sweetness. It's thicker than syrup, so it works best where a little body is welcome.

Do I need to soak Medjool dates?

Only if they've dried out and gone stiff. Fresh Medjools are soft and fudgy straight from the bag, ready to eat or blend. If yours are firm, ten minutes in hot water softens them enough to blend smooth or stuff.

What's the difference between Medjool and other dates?

Medjools are the large, soft, caramel-like dates, ideal for eating whole, stuffing, or blending into a smooth paste. Deglet Noor are smaller, firmer, and less sweet, better for chopping into a bake. For a sweetener you blend or a snack you stuff, Medjool is the one.

What can I make with medjool dates?
