Frozen Strawberries

Ripe strawberries frozen at their peak, ready to blend, simmer, or fold into a batter any time of year. They bring bright, sweet-tart fruit and a hit of vitamin C, and they pair with the frozen blueberries you probably already have.

How to cook it

  1. Blend straight from frozen into smoothies; they need no thawing.
  2. For a quick sauce or compote: simmer with a splash of water and a little maple until they break down and thicken.
  3. Thaw and drain before folding into a batter if you want to keep it from going pink and wet.

In the kitchen

Frozen strawberries are the bright half of a smoothie and the base of a two-minute sauce. Blended from frozen they bring sweet-tart fruit and body; simmered with a splash of water and maybe a little maple, they collapse into a compote for oats, pancakes, or toast. They partner naturally with frozen blueberries, so a scoop of each covers most fruit jobs a breakfast asks for.

Freezing softens them, so lean into the uses that want them broken down, blended, simmered, baked, rather than fighting for a firm, fresh berry the bag can’t give.

Health

Strawberries are one of the better fruit sources of vitamin C, and freezing at peak ripeness holds onto it. They bring fiber and bright flavor with relatively little sugar, and the frozen bag makes them a year-round rather than a summer-only fruit.

Common questions

Why are my thawed strawberries mushy?

That's just what freezing does to a high-water fruit: the ice crystals break down the cell walls, so thawed strawberries go soft and release juice. It's a non-issue for smoothies, sauces, and baking, where you want them broken down anyway. For a firm, fresh berry, you need fresh.

Do frozen strawberries need sugar?

Not necessarily. They're frozen ripe, so they're already sweet; taste before adding anything. A quick compote might want a spoonful of maple to round it out, but in a smoothie with banana or dates, or a bowl of oats, they usually stand on their own.

Can I use frozen strawberries in baking?

Yes, with a little care for the extra moisture. Thaw and drain them, or use them frozen and tossed in a little flour, and expect a slightly wetter, pinker result. They shine most in things that welcome that: quick breads, muffins, and sauces rather than a crisp cookie.

What can I make with frozen strawberries?
