Tofu is a blank check, and how you spend it is up to the technique. Pressed dry and roasted hot, it crisps into cubes for a bowl, a stir-fry, or a taco. Crumbled into a hot pan with turmeric and garlic, it becomes a scramble that stands in for eggs. Blended, it turns into a silky sauce or a dressing. The one way to get it wrong is to cook it wet and gently; it wants heat and seasoning.

Do I have to press tofu?
For firm and extra-firm, pressing is what gets you crisp instead of soggy: the drier the block, the better it browns and the more marinade it drinks up. Skip it only when you're blending tofu into something smooth.
How do I get tofu actually crispy?
Press it dry, toss the cubes with a little cornstarch and oil, and give them room in a hot pan or oven so they sear rather than steam. Crowding the pan is the usual reason tofu goes pale and rubbery.
Why is my tofu bland?
