Why did my tahini seize up into a paste when I added lemon?

That's normal, and it's about to fix itself. Tahini tightens and turns pale when it first meets acid or a little water. Keep whisking and adding water a splash at a time, and it loosens into a smooth, pourable sauce. Don't panic and don't stop.

How do I make a basic tahini sauce?
