Maple syrup is sweetness that pours and dissolves, which makes it more useful than sugar in a lot of cooking. It melts straight into a dressing, a marinade, or a glaze; it balances the acid in a vinaigrette and the heat in a chili or a stir-fry; and it brings a caramel depth to oats, pancakes, and baked goods that plain sugar can’t.
