Citrusy, floral, and mild, it’s the partner that rounds out cumin’s earthiness in a curry, a dal, a spice rub, or a pot of spiced vegetables, the two of them forming the warm base that so much spiced cooking is built on. On its own it’s gentle and slightly sweet; alongside cumin it makes the whole blend taste complete.

What's the difference between coriander and cumin?
They're different spices that work as a team. Cumin is warm, earthy, and assertive; coriander is milder, citrusy, and floral, and it rounds cumin's edges. Most curry and spice bases use both, often in similar amounts. Coriander alone tastes gentle and a little sweet; cumin alone tastes bolder and more savory.
Is ground coriander the same as cilantro?
They come from the same plant but taste nothing alike, and they don't substitute. Ground coriander is the dried seed, warm and citrusy; cilantro is the fresh green leaf, bright and, to some, soapy. A recipe calling for one never means the other.
