How to cook it

  1. Soak dried chickpeas overnight, or quick-soak (boil 1 minute, then rest 1 hour). Skip this for canned.
  2. Simmer soaked chickpeas about an hour, until they give completely to a squeeze.
  3. Drain and rinse. For canned, that's the whole job.

In the kitchen

Cook them fully and they turn creamy, which is what makes them so useful. Blitzed with tahini and lemon they’re hummus; simmered in spiced tomato they’re chana masala; roasted dry and hot until they rattle in the pan, they’re the crunch a salad or a bowl was missing. They take on whatever you cook them in, so they belong wherever you need bulk without a trip to the store.

Cumin, coriander, smoked paprika, and garlic are the dependable base. Keep the starchy liquid from the can if you’re making anything saucy. It thickens a stew the way a spoonful of flour would, minus the flour.

Health

Chickpeas pair plant protein with fiber and a slow-release carbohydrate, so a bowl built on them holds you without the mid-afternoon crash. They’re also one of the pantry’s better sources of folate and manganese, and the fiber that survives to the gut is the kind that feeds it.
