Bottled Lime Juice

The acid Mexican, Thai, and Southeast Asian cooking is built on, and the one place lemon genuinely can't stand in. A bottle in the door means the lime at the end of a taco, a curry, or a bowl is never the thing you're out of.

In the kitchen

Lime is the acid with a job lemon can’t do. It’s the squeeze that finishes a taco, a pot of black beans, or a bowl of rice; the tang in a coconut curry or a peanut-lime dressing; the brightness that defines Mexican, Thai, and Southeast Asian cooking. Nothing else in the pantry stands in for it, which is exactly why a bottle earns a permanent spot: it’s the acid you’d otherwise always be out of.

Add it at the end, off the heat, and taste. A curry that tastes rich but dull, or a bean pot that’s gone one-note, is usually one squeeze of lime from right.

Health

Lime juice brings brightness for almost no calories and no salt, a way to season for flavor without the shaker. It carries a little vitamin C, though the bottled, pasteurized juice holds less of it than a fresh lime would.

No nutrition framework here scores it as a food group; it’s a finishing acid, not a serving of fruit. Its nutrition is in the panel below.

Common questions

Can I use lemon juice instead of lime?

Not really, not where lime matters. Lime has a distinct floral, slightly bitter edge that defines Mexican, Thai, and Southeast Asian dishes; lemon reads as wrong in them. For a generic acid squeeze either works, but a taco, a curry, or a pad-Thai-style sauce wants lime specifically.

Is bottled lime juice as good as fresh?

For the everyday squeeze, it does the job: the acid on a taco, in a dressing, or stirred into a curry or a bowl. Fresh lime has a brighter top note and zest the bottle lacks, so save a fresh one for a dish where the lime leads. The bottle earns its place by always being on hand.

When do I add lime to a dish?

At the very end, off the heat. Lime is a finishing acid; cooked long it goes flat and can turn faintly bitter. A squeeze stirred in just before serving is what makes a curry, a black bean pot, or a slaw taste bright and complete.
