Baking Soda
Pure leavening power that also browns: paired with an acid it lifts a batter fast and helps a cookie or a pancake go golden. A little does a lot, which is exactly why it earns a spot beside the baking powder rather than instead of it.

- Pair it with an acid in the recipe: vinegar, lemon juice, or soured plant milk, which sets off the reaction.
- Whisk it evenly into the dry ingredients so it doesn't leave bitter, soapy pockets.
- Use a light hand; too much tastes metallic, and it works fast, so bake promptly.
In the kitchen
Baking soda is leavening in its rawest form, and it does two things at once: paired with an acid it lifts a batter quickly, and it nudges the surface toward browning, which is why cookies and pancakes made with it turn a deeper golden. It’s powerful and single-minded, so recipes use small, precise amounts and always alongside an acid, vinegar, lemon, or soured plant milk, to set it off and keep it from tasting soapy.
It works the moment it’s wet and the acid meets it, so mix gently and bake promptly. Think of it as baking powder’s sharper cousin: not a substitute, but the right tool when a recipe brings its own acid to the party.
Health
Baking soda is a pure functional ingredient, used in fractions of a teaspoon to make chemistry happen in a batter, so it isn’t something you eat for nutrition. It adds a little sodium in those small amounts, negligible in the scope of a whole recipe. There’s nothing to seek out or avoid here; it’s a tool, not a food.
No nutrition framework on this page scores it, since it’s a leavener rather than a food group. The full nutrition panel is below.

Common questions
Can I use baking soda instead of baking powder?
Not directly. Baking soda needs an acid in the recipe to create lift, and it's about three times stronger than baking powder, so swapping one for the other without adjusting will leave a bitter, soapy, or flat result. Use each where the recipe calls for it; they're doing related but different jobs.
What acid activates baking soda?
Anything acidic in the batter: vinegar, lemon or lime juice, or plant milk soured with a splash of vinegar. The soda and the acid react on contact to produce the gas that lifts the bake, which is why recipes using baking soda almost always include one of these. No acid, no rise, just a soapy aftertaste.
Why does my baking taste metallic or soapy?
Too much baking soda, or not enough acid to neutralize it. Unreacted baking soda leaves that telltale bitter, soapy tang, so measure it carefully, make sure the recipe has enough acid, and whisk it evenly through the flour so it doesn't clump into hot spots.
