Silky shiitake-miso broth over noodles and tofu, with the miso whisked in off the heat so it stays smooth instead of grainy. Light, savory, and quietly restorative.
Ingredients
Everything here is in your pantry — no shopping trip.
- Dried Shiitake Mushrooms 1 oz 28 g
- White Miso 4 tbsp 68 g
- Tofu 1 block 324 g
- Whole-Grain Pasta 2 cups 192 g
- Frozen Spinach 2 cups 170 g
- Carrots 1 61 g
- Garlic 2 cloves 6 g
- Ground Ginger 1 tsp 1.6 g
- Tamari 2 tbsp 36 g
Method
- Steep the 1 oz28 g dried shiitake in 6 cups just-boiled water for 15 minutes. Lift them out, slice, and keep the soaking liquid — that’s your broth.
- Bring the broth to a gentle simmer with the 2 cloves6 g garlic, minced, 1 tsp1.6 g ginger, 161 g thinly sliced carrots, and sliced shiitake; give the carrots a few minutes to soften. Add the 2 cups192 g noodles and cook until nearly tender, then slip in the 1 block324 g cubed tofu to heat through.
- Off the heat, stir in the 2 cups170 g frozen spinach and 2 tbsp36 g tamari. Whisk the 4 tbsp68 g white miso into a ladle of the hot broth until smooth, then stir it back in — never let it boil, or it turns grainy and flat.
Kids: serve the noodles and tofu with just a little broth spooned over — the strong miso can be a lot at first.

FoundA good miso noodle bowl staggers the pot so nothing overcooks and whisks the miso in off the heat so it stays smooth; ours added everything together and hinted at the tempering only in a note.
ChangedGave the carrots a head start, slipped the tofu in just to heat through, and moved the miso to an explicit off-heat whisk so it stays smooth and savory.
