Whipped pale and fluffy, bright with lemon and garlic softened in the juice. Five minutes in a blender and it's done.
Ingredients
Everything here is in your pantry — no shopping trip.
- Chickpeas 1 can (15 oz) 253 g
- Tahini 4 tbsp 60 g
- Bottled Lemon Juice 3 tbsp 45 g
- Garlic 1 clove 3 g
- Extra-Virgin Olive Oil 2 tbsp 27 g
- Cumin ½ tsp 1.1 g
- Sea Salt to taste to taste
Method
- In a food processor, blend the 3 tbsp45 g lemon juice, 1 clove3 g garlic, and salt, to taste together, then let them sit for a couple of minutes — the acid softens the raw garlic’s bite while you gather everything else.
- Add the 4 tbsp60 g tahini and whip for a full minute, drizzling in a splash of ice water, until the mixture turns pale, thick, and fluffy — this aeration is the secret to light hummus.
- Add the 1 can (15 oz)253 g chickpeas, drained, liquid reserved, ½ tsp1.1 g cumin, and 2 tbsp27 g olive oil. Blend a full two minutes, loosening with the reserved chickpea liquid a spoonful at a time, until silky and smooth.
Kids: use half the garlic and let it steep an extra few minutes in the lemon — it turns mild and mellow.

FoundThe best hummus steeps the garlic in lemon first to tame its raw bite and whips ice water into the tahini for a pale, fluffy texture; ours dumped the garlic in and skipped the whip.
ChangedReordered the method to rest the garlic in lemon and salt, then whip the tahini with a little ice water before the chickpeas go in for a lighter, silkier dip.
