Rolled oats toasted until nutty, then simmered creamy with dates, walnuts, and warm spice. Cozy and filling, and worth the few minutes at the stove.
Ingredients
Everything here is in your pantry — no shopping trip.
- Rolled Oats 1 cup 80 g
- Medjool Dates 3 72 g
- Walnuts ¼ cup 20 g
- Ground Flaxseed 1 tbsp 7 g
- Cinnamon ½ tsp 1.2 g
- Nutmeg ¼ tsp 0.6 g
- Maple Syrup 1 tbsp 20 g
- Vanilla Extract ½ tsp 2.1 g
- Sea Salt ½ tsp 3 g
Method
- Toast the 1 cup80 g rolled oats in a dry saucepan over medium heat, stirring, until they smell nutty and turn a shade darker, 3–4 minutes — this is what makes the finished bowl taste like more than plain oats.
- Pour in 2 cups water and add the ½ tsp3 g salt, ½ tsp1.2 g cinnamon, ¼ tsp0.6 g nutmeg, and the 372 g chopped dates. Bring to a simmer and cook 8–10 minutes, stirring often, until creamy. Stir in the 1 tbsp7 g ground flaxseed in the last minute to thicken — the oats keep setting as they sit, so pull them while still loose.
- Off the heat, swirl in the 1 tbsp20 g maple syrup and ½ tsp2.1 g vanilla, then top with the ¼ cup20 g walnuts, chopped.
Kids: mash the dates in at the start so the sweetness spreads through the pot, and keep the walnuts on the side for anyone who picks around them.

HeardA pinch of salt read flat, the oats set up too thick, and the vanilla was sitting idle in the pantry.
ChangedPinned the salt at ½ tsp, cut ground flaxseed from 2 tbsp to 1 (with a cue to pull the oats while still loose, since they keep setting), and swirled ½ tsp vanilla in off the heat.
