Chewy and salted-sweet, with peanut butter and soft dates blitzed into a no-bake dough. A few minutes in the processor, then the fridge firms them up.
Ingredients
Everything here is in your pantry — no shopping trip.
- Medjool Dates 12 288 g
- Rolled Oats 1 cup 80 g
- Peanut Butter ½ cup 129 g
- Ground Flaxseed 2 tbsp 14 g
- Chia Seeds 1 tbsp 12 g
- Cinnamon ½ tsp 1.2 g
- Vanilla Extract 1 tsp 4.2 g
- Sea Salt ¼ tsp 1.5 g
- Raisins ¼ cup 36 g
Method
- Blitz the 12288 g pitted dates in a food processor into a sticky paste — they’re the glue that holds everything together. If yours are stiff rather than soft, soak them in hot water for 5 to 10 minutes and drain well first.
- Add the ½ cup129 g peanut butter, 1 cup80 g rolled oats, 2 tbsp14 g ground flaxseed, 1 tbsp12 g chia seeds, ½ tsp1.2 g cinnamon, 1 tsp4.2 g vanilla, and ¼ tsp1.5 g salt. Pulse into a thick, tacky dough.
- Pulse in the ¼ cup36 g raisins just to distribute. Roll into 12 balls and chill 20 minutes to firm up. Keeps a week in the fridge.
Kids: let them roll the balls — it’s the whole appeal. Press a couple flat into “cookies” if rolling is a bridge too far.

FoundNearly every top-rated no-bake bite rounds the peanut and date with a splash of vanilla and a pinch of salt; ours had neither.
ChangedAdded vanilla and a little salt to the blitz, and folded in the corpus soak-if-stiff step for the dates so the dough always binds.
