Roast it first, blend it smooth, and it turns velvety without a drop of cream. Deep and nutty from the roasting, brightened with a squeeze at the end.
Ingredients
Everything here is in your pantry — no shopping trip.
- Frozen Cauliflower 5 cups 535 g
- Onion 1 110 g
- Garlic 4 cloves 12 g
- Cashews ⅓ cup 45 g
- Better Than Bouillon 1 tbsp 17 g
- Nutritional Yeast 2 tbsp 10 g
- Nutmeg ¼ tsp 0.6 g
- Bottled Lemon Juice 1 tbsp 15 g
- Extra-Virgin Olive Oil 2 tbsp 27 g
- Sea Salt to taste to taste
- Black Pepper to taste to taste
Method
- Heat the oven to 425°F. Toss the 5 cups535 g frozen cauliflower, 1110 g quartered onion, and 4 cloves12 g garlic with the 2 tbsp27 g olive oil and roast 30 minutes, until deeply browned at the edges — that browning is the flavor.
- Scrape the roasted vegetables into a pot with the ⅓ cup45 g cashews and the 1 tbsp17 g bouillon dissolved in 4 cups water. Simmer 10 minutes to soften the cashews.
- Blend completely smooth. Stir in the 2 tbsp10 g nutritional yeast and ¼ tsp0.6 g nutmeg, then brighten it with the 1 tbsp15 g lemon juice off the heat. Season with salt, to taste and pepper, to taste — it comes alive once it’s properly salted.
Kids: go easy on the lemon and blend it fully smooth for a mild, mellow bowl. Or set a few crispy roasted florets aside before blending — some kids like those more than the soup.

FoundThe top roasted-cauliflower soups all lean on a scant pinch of nutmeg and a squeeze of lemon at the end; blended cauliflower can otherwise read flat.
ChangedBlended in a little nutmeg and brightened it with lemon juice off the heat, and made a point of salting to taste — small moves that sharpen the roasted flavor without changing the dish.
